What's for dinner???

Happy Wednesday!!

I'm constantly looking for quick and easy dinners to do up during the week as the last thing I want to do after being gone 10 hours in a day for work and commuting is cook a big meal.  Besides, with Larry and I being on different shifts, it's not fresh when he gets home as I have to keep it warm for him.  Soooooo this is so simple and the possibilities are endless for this one!!

1 pizza dough roll (Pillsbury)
Cheese
Turkey or Ham
Butter
Stoneground mustard

Unroll the dough on a lightly sprayed cookie sheet and bake for 5 minutes at 400 degrees.  Take it out of the oven and layer with your ingredients (minus the butter).  Cut small slits on the sides of the dough and start to overlay in a criss cross pattern.  Put back in the over for another 10 minutes.  When done, brush a little butter over the top and enjoy :)

Yummy!!!  You can do it with breakfast items, baking items etc!!  Enjoy!!

I am little by little finishing a few of my projects.  Here is my little shelf I've been working on.  I just have to sand the edges and seal it and then hang it up and it will be ready to have something cute put on it :)

My tree :)

Happy Monday!!

So I was able to work on a few project this weekend which felt wonderful :)  I am amazed on how theraputic it is.  I had posted a little while ago about a tree that I found at GW.  Here it was in progress.

I have now finished it and just love it.  This will come in so handy through all the different seasons and holiday's!!  I'm excited for all of them :)

I had come across these yummy looking pancakes over on Amy's blog at The Idea Room and showed my hubby them on Saturday and he said those look good so Sunday morning I decided to give them a try :)

Now I used wheat pancakes and didn't have anything to put the cinnamon mixture in so mine doesn't look at nice as Amy's but they tasted delicious!!  Hop on over and check it out and give it a try!!

Well I'm hoping that this week goes a little smoother than last week.  Dad is settling in some and has put on 3 lbs since he got home on Thursday which is a good thing.  I gave him a treat on Saturday as the other day he wanted Mom to go get him Kentucky Fried Chicken but she didn't feel well so I surprised him and brought them over a dinner (which is really about 3 lol) and he ate every bit of it and he was very happy he got what he wanted lol.  Anything to put some weight back on him and get him stronger :)

Yummy!!!

Happy Friday,

While surfing around while I was relaxing I found this "Fall" recipe and I just had to share it.  It looks so yummy I am just going to have to try it :)

Here is the recipe.  Now I haven't tried it but I will :)  Sometimes I just love "comfort" food lol 1 can(s) (15-ounce) pumpkin puree, equal to 1 3/4 cups


8 whole(s) graham crackers, broken

1/2 cup(s) pecans, 2 ounces

1 tablespoon(s) light brown sugar

5 tablespoon(s) unsalted butter, melted plus more for greasing the pan

1 1/2 cup(s) (14 ounces) cream cheese, at room temperature

1 1/2 cup(s) granulated sugar

1 teaspoon(s) salt

1 teaspoon(s) cinnamon

1/4 teaspoon(s) freshly ground nutmeg

1/4 teaspoon(s) ground cloves

1/4 teaspoon(s) ground allspice

5 large eggs, at room temperature

1 cup(s) heavy cream, at room temperature

1 tablespoon(s) fresh lemon juice

2 teaspoon(s) pure vanilla extract

Whipped Cream, for serving

Pecan Praline Topping, for serving
 
1.Set a rack over a baking sheet and line the rack with 2 layers of paper towels. Spread the pumpkin puree over the paper towels and let drain for 2 hours, until the puree is fairly dry.


2.Preheat the oven to 500°F. Butter the bottom and side of a 9-inch springform pan. In a food processor, pulse the graham crackers until finely ground. Add the pecans and brown sugar and pulse until finely ground. Add the melted butter and pulse just until incorporated. Press the crumbs onto the bottom of the prepared pan. Bake the crust for about 8 minutes, just until it is fragrant and lightly browned. Let the crust cool completely.

3.In the bowl of a standing electric mixer fitted with the paddle, beat the cream cheese until it is very smooth. In a small bowl, whisk the sugar with the salt, cinnamon, nutmeg, cloves, and allspice. With the machine on, add the spiced sugar to the cream cheese and beat until creamy, scraping the bottom and side of the bowl. Carefully add the drained pumpkin puree and beat until smooth. Add the eggs one at a time, beating well and scraping down the bowl between each addition. Beat in the heavy cream, lemon juice, and vanilla until the cheesecake mixture is smooth.

4.Pour the cheesecake mixture over the cooled crust and bake for 12 minutes. Lower the oven temperature to 225°F and bake the cheesecake for about 3 hours, until an instant-read thermometer inserted in the center registers 150°F; the center will be very jiggly but not liquidy. Let the cheesecake cool on a rack, then cover with plastic wrap and refrigerate overnight.

5.Run a hot knife around the cheesecake and loosen the springform ring. Carefully remove the ring and transfer the cake to a plate. Using a warm knife, cut the cake into wedges and serve with the Pecan Praline Topping and whipped cream.

Fall Baking

Happy Monday!!

Sorry I missed posting this weekend but I've had some personal issues that I've been having to deal with the past few days with my Dad's health so I haven't gotten much done crafting wise this weekend.  Life can get so crazy at times I just have to step back and prioritize what needs to be done.  I even took a little "me" time and went and got my hair done.  It was a nice treat and the scalp massage was heavenly.  Sure did help my achey brain lol.  I'm hoping to get a little time throughout the week to work on a few projects.

I decided to make up a new recipe of cookies and give some to my Dad as he needs to put on weight.  Unfortunately he is losing way to much and not eating as much as he should be so wanted to entice him lol.  The picture doesn't do them justice but let me tell you, they are so yummy and moist and taste wonderful with a fresh cup of coffee :)



Pumpkin Butterscotch Cookies


1 sm can pumpkin
2 C sugar
2 tsp vanilla
2 eggs
2 tsp baking soda
2 tsp cinnamon
2 sticks butter (melted)
1 tsp salt
2 C walnuts (optional)
4 C flour
2 tsp baking powder
2 pkgs butterscotch chips

 Mix in order

Drop by tsp on greased cookie sheet

Bake @ 375 degrees for 12-14 minutes

Mom's Molasses Cookies

Happy Tuesday!  So it was a busy morning as my daughter, Carissa had her procedure.  Things went very well and she is going to be just fine.  She is resting now and will be able to continue her regular activities tomorrow although she will have the day off work to just relax.  Finally after dealing with this issue for over 4 weeks, she will now be able to eat normally again and believe me, she's very excited about that!  She is a petite thing and has lost 8 lbs during this ordeal and needs to gain it back.  Today will be consisting of more of the soft foods to ease her system back to the real food but tomorrow she is good to eat normally.  So with that being said, Mom of course wanted to give her some extra lovin so I made up some homemade Molasses Cookies that is my own Mother's receipe.  The best I've ever tasted and believe me, I've tried quiet a few.  So I wanted to share the receipe with you.  Feel free to try them... you won't be disappointed :)



1 1/2 C. Shortening
2 Cups Sugar
1/2 C. Molasses
2 Eggs
4 C. Flour
4 t. Soda
1 t. Cloves
1 t. Ginger
2 t. Cinnamon
1 t. Salt

Melt shortening over low heat.  Remove from heat and let cool.

Add sugar, molasses, shortening and eggs and beat well.  Stir in flour, soda, spices and salt.  Mix well.

Refridgerate until cold.

Roll into 1" balls and roll in granulated sugar.  Bake at 375 degrees for 8-10 minutes.
